Understand how to use letsencrypt for two - domains / certs - on a single - ip / linode --> both a wildcard cert?

As the title suggest. I have two domains on one linode and wanting a wildcard cert foreach domain. I'm having difficulty understanding the documentation and articles I'm finding. I think my biggest concern is whether this is a typical use case or not. Then a simpler framework to understand how-to.

I'm running apache on an ubuntu linode. Thanks in advance for help.
