I suspect this has to do with Xen virtualization, but I'm a bit of a noob. Can someone help me understand why the Ubuntu process?

You're using one of the kernels provided by Linode, which they happen to compile on Ubuntu.

There's nothing Ubuntu-y about the kernels. They're relatively vanilla.
