Exim: how to set up an email address?

I'm new to Exim and I'm having a hard time figuring out this:

How can I tell Exim to accept mail to the address foo@example.com and deliver it to the local user foouser, which mail is stored in /var/mail/foouser in mbox format?

The domain is specified in /etc/exim4/update-exim4.conf.conf like this: dcotherhostnames='example.com'

Why would you pick the oh so obscure (and convoluted) Exim instead of PostFix?

Using debian defaults is worth it sometimes… exim was a steep learning curve in the beginning. I have been there.

I use exim4(since lenny) along with sa-exim(spamassasin plugin) and it has worked very well.
