Is it possible to run vms inside of one vm? For instance, say I want to run a dedicated cpu plan with 50 cores. Can I run the main vm from linode as a host and run a hypervisor (hyper-v) inside of it?

I don’t believe Linode supports nested virtualisation, no.
I’d watch out for their Bare Metal Linodes - you may be able to with those.
