LKE 8 Volume Limit

It seems there is an 8 volume limit on a Kubernetes cluster.

Is this something that can be adjusted?
I so, can it be adjusted for the entire account so that all clusters (new and existing) don't have that limit?
If not, how can we get around this limit because we need many many more volumes than 8.

The limit you are bumping up against is not a limitation on the LKE service but instead a limitation on the way storage works within instances themselves. This is not something that can be adjusted.

To get around this, I suggest adding more nodes to your LKE cluster. This way, you should be able to mount them to the additional node and connect to them from your original deployment.
