What is the simplest way to get sendmail working?

Technical support referred me to a HOWTO page with a most recent Ubuntu page at http://library.linode.com/email/postfix … 0.04-lucid">http://library.linode.com/email/postfix/dovecot-mysql-ubuntu-10.04-lucid

The HOWTO is long, has lots of moving parts, and doesn't work. (Not that I am running 12.04, not 10.04 - I picked the most recent documentation available.

What is the simplest way to get email working? Does Squirrelmail do this simply?

Squirrelmail requires a working MTA (like Sendmail) to send email. It uses typically iMAP to receive email so you need both.

Not familiar with Ubuntu so I can't help much there, but I can't imaging it is that hard. Other options are Postfix and Exim.

What do you want to do, email-wise? Do you want to be your own Gmail, or do you simply want your system to be able to send mail out?

The simplest way is to install postfix per the gateway guide and forward your email elsewhere, like to Gmail. A fully-functional email system requires all those moving parts set up. With just postfix your server can send email and forwarding is very simple.
